Marysabel Caballero and her husband Moises Herrera own a 200-hectare coffee plantation in the municipality of Marcala near the border with El Salvador. The well-known Caballero plantation has been around for 3 generations and has won several awards for their efforts to improve the quality standards of coffee from Honduras. The berries are harvested when ripe and dried on covered and raised drying beds. The layer of the berries should be as thin as possible so that the berries can dry evenly and quickly enough despite the humid climate. Depending on the temperature, the drying process takes 20 to 40 days. The result is a clear, slightly fruity coffee with a rich and creamy mouthfeel. We try to emphasize this when we roast the coffee in our roastery.
