COLOMBIA - San Bernardo
HUYYYPED to introduce you to this super tasty coffee and our first San Bernardo varietal that we have roasted. The San Bernardo varietal is a natural mutation of Typica that originated in Guatemala, a pretty rare varietal to come across being cultivated in Colombia. Trees are smaller than Caturra or Castillo and not resistant to leaf rust, making cultivation tricky. A low-yielding plant, with a unique cup profile, complex with floral notes, spices, and a medium body.
This natural lot showcases Javier’s processing. Here, the natty process enhances the complexity of the cup with stewed stone fruit, hibiscus and florals/umami dancing in the cup.
