This naturalĀ Ethiopia selected to show the work of Mustefa, his approach to production and the amazing coffees he has been releasing. I'm stoked on all Mustefa's coffees I've tried so far!Ā This is a veryĀ juicyĀ natural processĀ coffee with heaps of body andĀ sweetnessĀ to it. It has a lovely fruit forward note of rapberry, and aĀ white chocolate note that hangs around in your mouth for ages.Ā This one is SO gooooooooood!
In the brew I'm getting:
Raspberry, white chocolate, lavender, and my taste markers areĀ round & complex.
Mustefa Abakeno is a smallholder with 18 hectares of land near Agaro in the Jimma Zone of Western Ethiopia. Mustefa only registered as an exporter in 2018 in order to sell his coffee directly to buyers, which he was able to do after changes to the regulations that year.Ā
This coffee is named after the small wet mill he set up called Beshasha. Falcon importers work alongside a teamĀ in Addis Ababa, who work directly with small producers such as Mustefa to increase quality by improving cherry selection, drying and farm management. They are also able to make the supply chain more efficient and so maximise the money going back to the producers. This is legit and is one of the many reasons I love working with importers like Falcon Speciality.Ā
In 2020, Mustefa acquired a second washing station, Kabira, to receive cherries from local producers. Due to subtle differences in location and microclimate, Beshasha now almost exclusively processes washed lots, while Kabira, which has more space for drying beds, is more suited to processing naturals. š more on that soon team!Ā Ā
